Greek Yogurt!!!

I am a really big fan of greek yogurt and I love finding recipes that use it. However, I am always looking for more so please comment and share your favorite Greek Yogurt recipes!
Here are a couple of my favorites that I think I actually got off of here.
Egg Salad
Recipe makes 2 servings.
You'll need:
2 large eggs, hard boiled, chopped fine
1/4 cup plain nonfat greek yogurt
1 dill pickle spear, chopped fine
1 tsp yellow mustard
Salt, pepper, paprika, or other sesonings to taste
Any other veggies you want (onion, cabbage, etc.) chopped fine
Stir together all ingredients in a bowl until well mixed. Serve however you'd like; I usually eat mine on whole wheat bread for a sandwich, or use a whole wheat tortilla to make a wrap. Makes 2 servings.
Greek Yogurt Pancakes
Main Ingredients:
-6 oz of your favorite Greek yogurt
- 1 egg
- scant 1/2 cup flour
- 1 tsp baking soda
- 1 tsp vanilla extract
- few dashes of salt
Optional Ingredients:
- 1/4 cup of skim milk (if too thick)
- your favorite sweetner, a couple tsps
Begin by mixing the yogurt and egg together in one bowl it is creamy. Then add the vanilla extract and mix that in with the egg and yogurt combo
Next in a separate bowl mix all of dry ingredients together
Once that is done add your liquidy vanilla, egg, and yogurt combination to the dry ingredients and stir. Once stirred the batter should be very thick at this point this is what you want. However, if you believe it is too thick now is the time to add that skim milk of yours.
Once the batter is done pour your mixture onto a heated pan or griddle. Cook until the pancakes bubble on one side then flip them. Cook until golden brown and you are ready to serve them!!! (I make mine in the microwave)

I like to make a broiled tilapia with a mustard chive sauce which the main ingredient in the sauce is greek yogurt
salt & pepper olive oil on tilapia fillet and broil for about 15 to 15 min.
In the mean time mix about 3/4 cup of greek yogurt, a sueeze of lemon, a teaspoon of agave nector, tablespoon of grey pupon mustard, s/p and chopped chives. Pour some of this sauce over the fish and there ya go!! Super easy and very healthy. We eat this many times a month in my house and my whole family loves it including my 2 and 10 yr old0 -
overnite oats - 1/3 cup each plain greek yogurt (suppose you could use flavored as well), almond milk and old fashioned oats. mix and throw in fridge overnite for breakfast next day... sometimes I add pb2 and some mashed banana, or honey and walnuts, or mashed up berries etc etc...0
