I have a bag of wings, it says a serving is 3pcs (85g) do you think the weight is meat and bone or meat only?

Meat & bone probably, as it is in the bag. Which means weight after cooking will be less as some moisture will cook out.

To check it out, weigh the entire package. Is it pretty close - compensating for bag weight - to the total package weight on the bag?

The bag isn't full, but 9 pcs, weigh equal to 6 servings.

I think it is meat only, the bag had 18 servings at 85g each and the net weight on the bag is 2260g.
