Barbecue for vegetarians/vegans
Hi vegetarians and vegans out there,
summer is coming and I love to habe barbecue in the parc with friends. I like to prepare yummy salads and to grill some tofu sausages, seitan steaks or soy burger. But also feta cheese and Haloumi tast quiet good.
Do you have any special vegetarian yummy things or special recipes to put on the grill?

I'm not a vegetarian, but I love
asparagus (dress with a little olive oil first)
corn on the cob (good plain, but for a mexican street food snack, after BBQ-ing dress with a little mayonnaise and grated cheese)
potatoes (microwave a couple of minutes first and finish on the BBQ)
smallish tomatoes (prick skin with a fork and toss in olive oil first)0 -
Oh I have got to follow this thread. I am vegan and live in KC, and the BBQs are already filling out the calendar. Also, big thanks to the non-veggies for posting food ideas anyway.0

We grill everything. Look up recipes for grilled stuffed zucchini or mushrooms, there are a lot of fun things you can do with those! Kabobs are always fun, too. Assorted vegetables (and pineapple...it's awesome on a veggie kabob) marinated in some Italian dressing.0

Love shish kabobs, that's what we're having tonight actually. Grilled pizza is really good, but we burned ourselves out on it last summer :ohwell: Grilled asparagus drizzled with evoo, salt and pepper is a staple at our house during the summer too.0 -

I forgot to add:
You can do the asparagus on the hot coals just after the fire is started, if you work quickly and turn frequently.
The cherry tomatoes or smallish tomatoes are best done on the dying embers.
I also regularly do thick slices of courgette (zucchini) and portobello mushrooms. Both should be tossed in olive oil first.0 -
Soy is estrogenic, you shouldn't eat that.
It's still very much up for debate. If you're doing it instead of meat, you're still getting half as much phyto-estrogen than you are estrogen from many animal products. Hey, I'm admitting here that it could potentially be harmful, but it isn't really proven. There is also debate as to whether plant estrogen can harm our human bodies anyway. I don't eat much of the stuff either for the reason you stated, but it may be premature to scare people off.0 -

I love to have large flat cup mushrooms, corn cobs, pre-boiled new potatoes, courgette slices (zucchini), Aubergine slices (eggplant), half bell peppers. We use a tiny bit of oil but I guess you could use cooking spray.0 -

We have a lot of quorn products in the UK so I have what the meat eaters eat and lots of salad.

We love potatoes on the grill topped with homemade sauces. you can boil them first (or just wash, puncture a few times, wrapped in a paper towel and microwave 5 m for a large potatoe), peel it, cut in two, lenghtwise, brush oil and salt all around and put the flat (cut) side on the grill first. Let the grill do its job for a while, it will make nice dark lines, turn it around and grill some more. enjoy with some type of sauce.
seriously, people go crazy about these two:
1. Mint pesto: blend seaded serrano peppers, oil, onion, garlic, salt peper and a bunch of mint leaves.
1. Blend red japapeno, some roasted peanuts, oil, onion, garlic, salt pepper and mint leaves.

I always grill portobello mushroom caps and use those in place of burgers. You can top them with cheese and condiments just like a regular burger. I also make my own veggie burgers out of chickpeas, lentils, black beans, etc.

The burgers will be a little mushier (since I don't use eggs as a binder) but I found that if I placed them on tin foil on the grill, smashed them back together after flipping them, and topped them with cheese (although I'm sure you could do without cheese if you wish), they held together fine and taste great!0 -
I pin marinated capsicum, cottage cheese(paneer ), Onion, tomato, mushroom in a stick and barbecue it. You can use mint chutney as a dip.
Also baby potatoes can be pricked and marinated in the tandoori spice mix and then barbecued. Also, try slitting okra and stuffing it with the masala mix and quickly roast.
Masala mix: Chilli powder, coriander powder, cumin powder, salt, finely chopped garlic (optional), pinch of sugar and squeeze some lemon juice.
Also cottage cheese can be marinated in many different ways. You can google the following mix : tandoori, achari, pudina(mint), soya sauce + tomato ketchup, etc.
If you get large aubergines, less sweet pumpkin, slice them and soak the slices in tamarind water + salt for an hour. Take fine semolina/rice flour add salt, chilli powder, cumin powder to the flour. Take out the slices one by one after an hour, simply pat it in the dry spice flour mix (slice will be lightly coated) and grill them. sprinkle little oil while iti s grilling grilling. Take out once golden brown. Even potatoes can be used for this.

Bean burgers.
Quorn pieces on a skewer in peanut satay sauce.
A salad with pasta and grilled italian veggies.
Grilled corn.
Those massive mushrooms, grilled and then stuffed.
Grilled italian bread with all sorts of toppings.
Roasted or grilled peppers chopped up with ricotta, fresh oregano, olive oil and balsamic vinegar.0 -
Skewer pieces of green pepper, red pepper, red onion, courgette, small mushrooms, and a couple of cubes of haloumi (15 grams per skewer) onto wooden sticks, season with a little extra virgin olive oil (hardly any, really), some salt and pepper, and barbecue, turning a couple of times.
I serve this with thousand island dressing (Tesco do a nice one, something like 30 calories per tablespoon, with no nasty sweeteners or anything) on a tortilla wrap (the small ones that are 135 calories) - it is GORGEOUS, filling, and healthy.
I had friends over for a BBQ at the weekend, some non vegetarians too, and everyone loved these (I was the only one who knew how healthy they were).0 -
a head of romaine lettuce, drizzled with olive oil and vinegar, then dust with preferred spices (nutritional yeast, black pepper, garlic and ancho chili powder are all good options) and throw on the grill until nice and crisped. It's delicious.0

I didn't grill it, but I did make some barbecued seitan ribz in the oven last night from The Fat Free Vegan blog. They were pretty good, I think would have been even better on the grill. I also like grilled corn and squash or zucchini. I also recently discovered field roast veggie franfurters, and those were pretty yummy!0
