Daily Nutritional Goals - Target Values

I am lost with the Daily Nutritional Goals target values.

What should the healthy % on Protein / carb / fat / cholesterol be?

    40/39/30 isn't a bad place to start, or set your protein to 0.8g per pound of bodyweight and fat at 0.4g per pound and the rest as carbs. At the end of the day though, your calorie deficit is the most important thing.
