    Zoodles are a big hit at my house... Serve as a replacement for pasta, or get fancy.

    This is my favorite, but must be done just before serving.
    Slice as thin as you can (I use a mandolin). Slice some garlic, 1 tbsp butter, 1 tbsp olive oil (good for 2 med - large zucchini), & saute the garlic for one minute (don't brown!!), then add zucchini, stirring constantly. When just about ready, add 4-5 basil leaves (torn or cut) & stir in. If you don't have fresh, use a tsp dried instead.

    Another option is to slice like fries, toss in a bowl with olive oil & garlic powder, & arrange on a cookie sheet. Bake 10-20 minutes on 400.
