4 boneless skinless chicken breasts boiled

1 pkg of Cauliflower florets cooked and mashed

1 can of rotel

1 can of green chiles

1 can of corn

6 wedges Laughing Cow light creamy swiss

1 can of green enchilada sauce

2 packages of La Tortilla Factory Smart and delicious multi grain wraps

1 cup to 1.5 cups of cheese (I used mozzerella/provolone)



I put the cooked chicken, rotel, green chiles, laughing cow cheese, corn, and cauliflower in mixer/kitchen aid. Spoon mixture into the tortilla wraps. Top with enchilada sauce and cheese. Bake at 350 for about 30 minutes.



Mine made 12 enchiladas.
