My favorite is tortang talong! Roast or grill eggplant. Peel the skin off. Mush down with fork. Crack eggs into bowl, wisk. Coat mushed eggplant in egg mixture, like french toast. Add to pan and fry. Add salt and pepper or seasoning of your choice
