I don't think I am doing this right

So I recently switched from Weight Watchers to using MFP. I really like it!!! However, I am noticing that I am ending the day with a huge deficit in calories. For example, last night I had about 1,600 calories left before dinner. Today, I am trying to bulk up my meals with rice and bread. I eat breakfast, lunch, dinner, and snacks. I feel like I am eating all the time.
I have about 50lbs to loose. My first week had a big number (5lbs), but the next 2 weeks I gained it back. Is it possible that it has been slow because I am not eating enough during the week, then too much during the weekend (I haven't been good at tracking on the weekends)?

Hi there! I've done weight watchers in the past too, and I find MFP to be easier and more convenient. An important thing to remember is that you should be eating at least 1200 calories a day, less than that and your body will start storing fat instead of burning it. Which could be a problem when you have so many left before dinner, especially if you're super strict during the week and lax on the weekend because your body has a hard time getting out of starvation mode.
