Low Carb "Fried" Chicken
Adapted from http://www.recipelion.com/Chicken-Recipes/Best-Oven-Fried-Chicken
1 cup yogurt (I use 0% plain)
1/2 tsp powdered garlic
1/2 tbsp curry powder
1/2 tsp ground mustard
1/2 tsp Worchester sauce
1/2 tsp Siriccha sauce
1.5 lb chicken (any part works fine, boneless or skinless doesn't matter)
3 servings pork rinds
salt
pepper
1 tbsp garam masala
1. Combine the first six ingredients, then add raw chicken. Let marinate for at least 1 hour
2. Preheat oven to 400 degrees
3. While oven is preheating, put pork rinds, salt, pepper, and garam masala in Ziplock bag. Use a rolling pin to grind pork rinds into a fine powder.
4. Spray a cooking sheet with cooking spray.
5. Take chicken out of marinade, wipe of excess marinade, and coat with the rind mixture. Put on cooking sheet. Spray with cooking spray.
6. Cook in oven for 45-50 minutes.
Assuming that the spices add 4 grams net carbs and the yogurt adds 4 (since I used a yogurt with 7 grams per cup and surely less than that made it onto the cooking sheet), it would be around 2 net carbs per serving.
