made a dinner I was kind of proud of tonight.

Skillet grilled half a skinless chicken breast, cooked in a light white wine.
Sautéed spinach and split cherry tomatoes, served with a tablespoon fresh grated Parmesan.
Baked sweet potato with a half cup fat free cottage cheese and a sprinkle of cinnamon.
386 calories. dmflfbhaxcw1.jpg

This looks amazing! I've never tried cooking with wine. Reminds me I need to experiment in the kitchen more...

Looks delish! I have never put cinnamon on my baked potato, have had it on cottage cheese though. Will have to try this:)

I thought that was raspberries and blueberries with sugar on your plate. I was going to be like, "kind of a weird side dish for chicken but okay". lol
Sweet potato with cottage cheese? I'm both scared and intrigued.

Ok, re-read your post.... Sweet potato makes sense . I was thinking regular Idaho baked potato :)

Did you weigh everything? It looks like it would be more than 385 calories, unless you're using a very small plate. It looks like 4oz of chicken at least, plus probably 200-250g of sweet potato (I had 80 calories of sweet potato last week and it looked much smaller than that).

It does look good though... but I think you're underestimating your portions.

Chicken was weighed, it was very thin. Sweet potato was scooped, some of its insides have been refrigerated for tomorrow.
