How to get the most from running plan?

I got a little running plan through my asics, and I love it. It has me running pre-conditioning jogs for the first two weeks, at a pace of 15 min/mi. This is relatively easy for me; I'm a slow runner but typically 12ish minutes is where challenge comes in. These are my first times running again since an accident three months back (I'm fully healed, just lazy ha), so it's counting me as a true beginner.
One mile at this pace is pretty easy, can I do two of these miles per run? I feel like it might better condition me for when I pick up the actual pace in two weeks. I also have a lot of free time in the next two weeks and want to put it towards working out while I can.

I hit a similar issue frequently. I just started a marathon plan in December right after a marathon so I snickered at the first couple of week's ideas about mileage. Unless you have a personal coach that customizes your plan they're more like guidelines anyway. I run two more days a week than my current plan calls for. I use the schedule simply to plan for speed work and long run general guidance.
If you're feeling good and want to do more than a plan calls for then by all means do so.

Ah yes, wonderful! Thanks. I also walk an extra 3-5 miles each day from class, so it's no wonder I'm craving a little more distance from my runs0
