Love to hear some ideas on fingerfoods to prepare in advance for the week. I will start

Turkey Meatballs:
1lbs ground turkey
3/4 cup salsa
1 cup old fashioned oats
1 egg beaten
desired seasoning

divide into 1" balls and bake at 400F for 15-20 minutes
makes approximately 30 50kcal balls

Those black bean quesadillas look wonderful!! And that website is amazing, something I've often thought of doing because I scratch cook and can do it on a shoestring. I'm saving that, not just to refer to, but to link to people who say they can't cook or can't afford to eat well. THANKS!

I have done exactly that (linked this site) in several "but I can't afford healthy food" threads. It really is a great resource. I do a lot of scratch cooking too and several of my favorite recipes come from Budget Bytes.

No problem. Its one of my favorite sites for recipes. Check out the Honey Srirancha Chicken Thighs. It's great as written and the sauce is awesome used in a stir fry. Had it with pork, snap peas and broccoli last night. So yummy!
