Butternut squash breakfast hash

After a productive trip to our local farmers' market on Saturday I needed a use for a relatively small but wonderful butternut squash, so I decided to throw together a breakfast hash on Sunday morning:
1 small butternut squash, peeled and cubed
1 oz pancetta
1/2 onion, diced
1/2 Red Bell Pepper, diced
2 cup chopped kale
1 tsp Ground Cumin
1 tsp Paprika
1 tsp Ground Coriander
1/2 tsp salt
2 large eggs
Pre-heat oven to 350F. Render down the pancetta over a medium heat in a large oven-proof skillet. Add the squash, onion and spices, stir to coat everything and then cover and cook until the squash is tender, stirring occasionally. Add the pepper and cook for another 2-3 minutes, then add the kale for another 2 minutes. Make 2 wells in the mixture and place 1 egg in each. Put the skillet into the oven for 8-10 minutes, or until eggs are set. Serves 2, 161 calories per serving.
This can be a relatively large portion, depending on the size of the squash, so you could always use 3 eggs and have it serve 3 people instead of 2.

I just discovered butternut squash and I love it. Last week I bought a gargantuan one and roasted it. Hubby and I ate it all week long. It was wonderful.0
