Chicken Parmesan Baked Ziti recipe

I found this recipe on Sparkrecipes.com and just got to try it tonight! It's delicious! It takes some work, but it's totally worth it! :)

Ingredients

1.5 lbs chicken breast tenders (I used Kroger's Simple Truth Chicken Cutlets)
1 cup plain bread crumbs
1/4 cup grated Parmesan cheese,
1 tsp garlic salt
1/2 tsp garlic powder
1/4 tsp ground black pepper
1 egg
1/4 cup milk ( I used skim)
2 Tbsp extra virgin olive oil
1 jar (1 lb. 10 oz.) spaghetti sauce (I used Prego's Light Smart)
1 lb ziti
1/2 grated Parmesan cheese
1 cup part skim mozzarella cheese

I had to alter some of the ingredients (mainly the chicken and the ziti since I was cooking for just me, my mom and my dad) since the recipe makes 8 servings and we didn't need that much. Even doing that, I'm pretty sure the serving size was still 8 since we have leftovers for several more meals!

Directions

Mix bread crumbs, Parmesan cheese, garlic salt, garlic powder, and pepper. In a small bowl, mix egg and milk.

Cut chicken tenders into 1.5 inch cubes. Dip chicken cubes in egg/milk mixture, and then roll in bread crumb mixture.

Heat olive oil over medium heat. Pan fry chicken pieces until browned, approx. 4 minutes on both side.

While chicken is cooking, prepare ziti per package directions until al dente (I cooked it for about 6 minutes because it was supposed to cook for 25 minutes in the oven, but not all the pasta was cooked all the way through, so you may want to cook it for 8 minutes)

When chicken is done, remove from heat and let sit on a paper towel.

When ziti is done cooking, drain and pour into greased (Pam) 9x14 pan (I used an 8x11 pan).

Pour spaghetti sauce over pasta, and sprinkle with 1/2 cup Parmesan cheese.

Arrange chicken in single layer over pasta. Sprinkle mozzarella cheese over chicken, and bake in oven at 350 F for 25 minutes or until heated through and cheese melted.
