Questions about calorie deficit

I try to eat around 1600 calories a day. On days when I eat around 1200-1300 calories the next day I'm super hungry! I guess my body is trying to make up from the previous day. Also could someone explain the calorie deficit bar graph. Would number should I aim at for the end of the week. Thanks!!
