Gluten Free Low Carb Budget Friendly Recipes

I have Celiac Disease and Type 2 Diabetes. I'm looking for budget friendly recipes that are compliant with these health issues. My family is full of picky eaters!

Also looking for support from others with same health concerns. I have 100+ pounds to lose.

    I'm writing to find this later. I'm going through a diet shift, myself, right now and this sounds similar to what my doctor recommended.

    I eat vegetarian, so my protein sources are a bit carb-y. One thing I've been really loving is stuffed portabello mushroom caps:
    4 mushroom caps
    1 cup black beans
    1/4 cup cilantro
    3-ish tablespoons of Parmesan cheese

    Roughly mash the black beans with the cilantro and cheese, put in the caps and then bake in the oven for 20-30 minutes (until the mushrooms get juicy).

    2 mushroom caps is about 250-300 calories and pretty filling!

    Today we had broiled fish with vegetables: mushrooms, zucchini, tomatoes, all colors of pepper, and lemon slices - the fish itself was stuffed with finely chopped tomatoes, finely chopped lemon with skin on, yellow pepper, lots of parsley and a squeeze of lemon juice. On the side we had a local dip made out of yogurt, tahini (sesame butter), lemon juice, garlic, and parsley. It goes really well with seafood. We also had some baba ganoush (baked eggplant flesh mixed with tahini and other stuff). The meal was amazing, low carb and gluten free.

    I'm sick so yesterday I put a whole chicken in the crockpot for soup. I added celery, onion and carrots with a little gluten free chicken soup base. So good with a little bit of brown rice gluten free noodles. I'm the only one who will eat it!

    Q2Power your soup sounds good and it did not require you to keep watch since you put in crock pot. Others do not know what they are missing.
