Problems getting calories in

Now here's my issue and it's two fold.
First off I'm trying out a low processed carb lifestyle. So I am basically avoiding wheat and processed sugar. I say avoiding because they're not completely banned I just don't want to eat them on a regular basis. This has caused a dramatic drop in my calories.
Couple this with me trying to do 16:8 on work days and I'm barely reaching 1200 cals. Here's how my day works.
9am get up and get ready for work. Work at 10.30am. Break (10mins) at 1pm. Lunch break varies depending on the day between 2 hours to 1 hour long but always finishes at 5.30pm. My second break (10mins) is at 7.30pm. I then work until 10-10.30pm. I can NOT, I repeat can NOT eat when I'm working.
So my problem is finding calorie dense low carb food that can be consumed quickly, has to be made before hand and can be eaten cold (since I have no time to heat it). Any advice or food ideas?

Macadamia nuts.
Boiled eggs.
Jerky.

What Howl_shaowkn said. I eat almonds as well... I buy the large container at costco and weigh out the amount I want to eat and put them in a little zip back for work. We also buy the "Planters Nutrition" packs as well. I also like greek yogurt, the kind without fruit.0
