Erratic sleeping pattern

So as of lately, I've had this really erratic sleeping pattern. I get to 9pm and can't help but sleep, only to wake up again at 10pm starving. I always wake up a little bit after a snack of fruit and protein bar, and then I fall asleep at a regular time. Could this just be TOM, or something else?
I do weight train 3x a week and pole dancing 2x.
I am 5"5 and roughly 123 pounds
Used to be a dieter, but am now eating when I am hungry, stopping when I'm full. Also I do not eat gluten.
Today's food intake was:
Breakfast:
eggs, 2 slices of low cal GF grain bread with cheese
Snack:
Banana, a few squares of 71% dark chocolate, Cashews
Post workout protein shake:
(1/4 banana, soy milk, protein powder)
Lunch:
GF Grain bread sandwich with 25g chicken, slice of cheese & salad
Snack:
Winner's low carb protein bar & Cashews
Dinner:
Minestrone soup
Chicken breast, Hummus, Salad and 1.5 taco shells
And after I woke up i had 100g of frozen banana and a winner's low carb protein bar.
I also had Define8, a workout supp before training, but I did not have that yesterday and still had the weird sleeping pattern.
I have a history of PCOS which seems to be getting better as I am not underweight anymore. I had my blood sugar, fasting glucose etc tested a few months ago but all was normal.
Any thoughts would be appreciated =]
