i eat pork and chicken through out the week. On the pork belly, should i cut of the fat? I eat it otherwise i feel like I'm left with nothing. Is it extremely bad to eat or as its part of my only protein intake a day, its ok ?

Thanks.

Nothing is "extremely bad to eat", it's just a matter of whether it fits in. When you log the calories, make sure your entry is accounting for there being fat there. Same with chicken skin -- use an entry that says "with skin" and not "meat only".

    (I would probably eat it.)

I had pork belly tacos at a restaurant a couple weeks ago, and I've been thinking about making my own version at home ever since. The fat makes the belly. If I didn't want that texture, I'd just get those cheap, razor thin center cut chops.

The fat is the reason to buy or make pork belly.
