Santa Fe Chicken Recipe

Here's my take on Santa Fe chicken



1 3/4 lbs boneless skinless chicken breast
1 14.4 oz can diced tomatoes with mild green chilies
1 15 oz can low sodium black beans drained
8 oz frozen corn
1/2 cup chopped fresh cilantro
10.5 oz condensed cream of chicken soup
3 scallions, chopped
6 cloves minced garlic
1 tsp onion powder
1 tsp cumin
2 tsp chili powder
1/2 tsp salt
1 cup shredded cheddar cheese


In a 10 inch Dutch oven combine chicken, diced tomatoes, beans, corn cilantro, soup, scallions, garlic, onion powder, cumin, chili powder and salt.

Bake for 2 hours using 14 coals on top and 7 coals on bottom to get 350 degrees in your 10 inch Dutch oven.

Remove chicken breasts from pot. Shred chicken using two forks. Return chicken to pot. Add cheese. Bake for an additional 10 minutes until melted.
