Cooking - Looking in the Rear View Mirror

Looking in the rear view mirror, I notice how cooking by sight can lead to additional calories. When instructed to add oil or cheese, I would eyeball the amount. Now that I am measuring what I eat, I now see I was way too liberal in calculations. There is nothing wrong with oil and cheese, they add great flavor (did I mention bacon fat, too?) but the extra calories do add up - around my waist.

Now when I cook, I make smart choices and measure and will often cut the amount oil by 25%. And I even have started to use an olive oil misto sprayer occasionally.

I'm from Wisconsin and I came out of my mom's womb eating cheese but now when I make a grilled cheese sandwich I measure out my 1-2 ounce serving. And I certainly don't snack on more cheese while making the sandwich as before. I measure my cheese when adding it to recipes. I am experimenting with hard cheese like parmesan, pecorino, etc. and aged cheese because they are strong flavored and I can use less.

Need I mention weighing pasta? I repeat - these foods are not "bad" foods but we all must be aware of the amount of calories they contain and how they affect our daily calorie count.

In the business world, there is a saying, "You can't manage what you can't measure." This certainly applies in here as well.
