Help with hitting carb macros

Hi guys, newbie here.

Bit of background info, I did keto for a couple of months, had great results, lost about 20lbs of fat. Im currently cycling carbs to build some muscle and fuel a workout.
Im finding it hard to hit the carb macros, I cant eat anything with gluten in it, white potatoes, and gluten free food isn't worth spending cash on!
Basically, I can eat sweet potato and rice, how exciting :(, but it's a huge amount of these to hit my macros, and I'm full before I get through the meal too!
Currently : 138P 55F 126C
