Here is a link for a quiche recipe. To cut calories, don't use a crust and put the eggs in a muffin pan. I use the stir fry veggies from trader joes. I have seen on the Web that you can freeze but I have never tried it.

A favorite of mine is quinoa frittatas... I've used bell pepper in place of the zucchini and added onions!

I like making omelets with spinach, mushrooms, and spicy seasoning in a one egg frying pan to use for a English muffin sandwich. I fry up a piece of sausage to put on the sandwich and add a slice of cheese. You can actually let all of this cool, put the sandwiches together, wrap in plastic wrap, and freeze them. On the weekends, I will make several of these sandwiches to have throughout the week. I pop them in the microwave on a paper towel (without the plastic wrap) for about 60 seconds or so (depends on the microwave) to heat up and they are quite good!0
