Does anyone cook dry beans? I've heard that they cause weight gain, any opinions here?

I use them to make chili and soup. Like any food, you will only gain weight if you consume more calories than you burn. Beans are an excellent source of fiber and protein, so a little goes a long way (plus they are fairly inexpensive).

To cook dry beans, such a pinto beans, soak them overnight in water. This will soften them up for cooking. After they have at least doubled in size dump out the soaking water. By dumping the water, you'll have less difficulty with the beans causing gas. Put the drained beans in a crock pot and add water to cover by 1 inch. Cook the beans 8 hours or until you can blow on a spoonful and see the skins kind of peel and roll back. Do not add salt to cooking beans as this causes them to take longer to soften up.
Just like anything else, beans can cause weight gain if eaten above one's caloric needs for the day. Just plan carefully and you should have no trouble adding frugal, nutritious beans to your diet.0
