Determining my proper activity level?

I'm having difficulty trying to decide whether I should classify myself as lightly active, or active, in order to determine my daily caloric intake. I'd like to lose about 7 more pounds. I work 5 days a week at a busy coffee shop. I've got three kids, which keeps me busy before work and after they get home from school. I've recently been using a Fitbit to estimate how active I am. Unfortunately, it only measures my steps, and doesn't take into account the very tiring work of say, making a few hundred drinks throughout the day. I've been trying to add in walks after work, in order to make it to the 10,000 steps a day the Fitbit seems to want me to do. However, Even when the Fitbit awards me with extra calories when I hit 10,000 steps, it often takes them away by the time I go to bed. Or, even more infuriating, it takes them away during the night, making a very busy previous day, look like a failure. Any thoughts? I'm so frustrated. I feel like a very active person, and eating 1360 calories a day is difficult when dealing with the stresses of work, kids, and the obligations of keeping a home.

If in doubt go with the lower level of activity and if you lose more weight than you think you should be due to the calorie deficit then raise it up.
