What the fridge yields

Two days to go grocery shopping. Time to clean out the fridge. This is what I put together last night. I am going to call it:

Faux Cauliflower Chicken Enchiladas

-Head of Cauliflower
-1 lb Ground Chicken
-1 Red Bell Pepper
-1 (mostly full) bag Tortilla Chips
-1 Jalapeno
-1 small can Oretega Green Chiles
-1 large can Green Enchilada Sauce
-Cilantro
-green onions
-1Lawry's Taco Seasoning
-1 Can Bushes Low Sodium Black Beans
-Garlic
-White Cheddar Chees
-Sharp Cheddar cheese
-2 avocados

1. Cut the Cauliflower into small florets and steams.
2. Placed in drainer to cool and dry.
3. Browned Chicken. Added half the Seasoning Packet, Chopped Jalapeno and the chopped up Garlic.
4. Mixed the cooled Cauliflower with chopped red pepper and half the tortilla chips that I crumbled.
5. pulled out a large baking dish, sprayed with canola oil and layered like this:
*Half the Enchilada Sauce
*Half the Ground Chicken
*Black Beans
* Cauliflower, Pepper, Tortilla Crumble mixture
*Half the Ground Chicken
*Half the Enchilada Sauce
*White Cheaddar cheese
*Balance of Tortilla chips
*Sliced Avocados
*Sharp Cheddar Cheese

Baked at 350 for 50 Minutes. Served with the chopped Green Onions, Cilantro and dollop of Sour Cream. Wife loved it.
