Meal Ideas for Work?

I work for a bank, and there isn't much moving around other than walking from the teller stations to the lobby and back. So when I eat, I usually go from completely starving to not very hungry at all.

What are some healthy or decent meal ideas? I was thinking something simple like lunch meat and hummus. I would like to avoid any bars and carbs, so please respect that.

    Do you have a fridge at work? I typically make a salad with a lean protein (various kinds) for each lunch so I'm not tempted to go out. If I have food around, I'll eat it. Other things I depend on are Breakstones Single Cottage Cheeses, Muller Greek 100's and String Cheese. Everything is better with dairy! LOL

    I always keep a bag of protein powder, bag or rolled oats, cans of beans, cans of tuna, cans of chicken at work at all times. No refrigeration. Can eat them in minutes.

    GOD I love dairy, and we do have a fridge. If I keep salad, what's a way to preserve the lettuce so it doesn't go bad as quickly (besides eating it all lol).

    What kind of beans?

    If you're going to do lunch meat, try to find some good quality, low sodium lunch meat. Boar's Head and Castlewood are some decent options.

    Asian Chicken Lettuce Wraps
    Smoked Salmon & Brie Cheese
    Celery Sticks and Cream Cheese
    Broth-Based Soups (low-sodium)
    Tuna with Yellow Mustard (instead of mayo) in a Cucumber "Boat" (hollow out cucumber)
    Hard-Boiled Eggs

    Since you are doing low carb, you might want to check these out. They're only 12 carbs for 3 crackers, so there are only 4 carbs in one.

    I typically buy a couple romaine hearts, cut them all up and portion them into Rubbermaid containers for the week on Sunday - typically 3-5 depending on how much lettuce I buy. I have found that if I do that, it lasts until Friday. I used to buy the bags of pre-cut stuff but it would last about 3 days and I'd get angry. I've been doing this for months now and it hasn't failed me yet.
