Since I have been eating better this year, my eyebrows have stopped growing as quick and so had the hair on my head. Has anyone else noticed this ?

Nope--but that can be a sign of thyroid issues or other medical problems.

I've noticed that just trying to go from 5 fruits & veggies to 10 a day (mostly veggies) has made a huge difference in my nails and hair. All of the sudden my hair is growing much faster and my nails are a lot thicker.

You are in essence netting ~1000-1200 calories if we assume that your fitbit adjustment is double the actual burn. If it's accurate for your burns then you're netting less than 1000 calories.

eat more food. Malnourishment/undereating can cause hair growth/loss issues.

Also add some good vitamin supplements in! You might be missing out on a lot of nutrients with eating less food. (*)

I am eating around 1400 to 1500 calories a day but my exercise is just walking at this point so I am not eating the calories back. I am not undereating at all. There are a few days where my diary is a bit weird because we went out for dinner and the day was a write off. I actually eat lots and have a good handle on the food situation.

On average the overall burn for the day via Fitbit is around 2400 including TDEE and exercise.
