Healthy dinners

Anyone have any healthy dinners? My husband won't eat healthy at all Cus nothing tastes good to him. Any good healthy recipes?

I'm with you! My husband is a picky eater and doesn't like many veggies. It's tough trying to plan meals that everybody will eat! My diary is public (although I'm sure my food choices could be healthier)... feel free to add me as a friend.0

To ease him into accepting healthier eating, start by focussing more on including all the healthy foods that give important nutrients than than you focus on eliminating less healthy foods. What kinds of foods does your husband like? It may be possible to add veggies to some of them in an appealing way. We love chili around here, so in addition to meat, spices, beans, onion, and tomato sauce, I add chopped celery, carrots, green peppers, and cauliflower. These veggies harmonize nicely with the strong spices, and when simmered for a long time as makes chili taste best, will be tender so the texture is less of an issue.
If "smothered in cheese" is the only way he will eat broccoli - go with it, because he is going to eat the cheese anyway, so you might as well get that broccoli in, too. That works for cauliflower, too (try including steamed cauliflower with homemade baked macaroni and cheese).
Marinating a number of veggies then either sautéing or roasting can transform the flavors and textures into something very different and delightful compared to the old "boil until mushy" method, which might help him to enjoy veggies rather than looking at them like a chore.
One of my favorite healthy meals is sloppy joes (homemade mustard, ketchup, brown sugar sauce) made with ground turkey served over mashed cauliflower (look for a recipe that calls for a couple ounces of cream cheese for best flavor). Any chance your family would enjoy something like this?0 -

I really wanted to try spaghetti squash but my husband wasn't all too thrilled so we compromised.
We traded out the pasta for the squash (illusion of "noodles") and kept his manly spaghetti...it was good!
Although he wouldn't eat it as a side noodle as some of suggested (butter, salt, pepper), he would eat it this way because it still had his meat0
