Healthy pre-prepared lunch?

I pack a lunch everyday and I was wondering if anyone knew a recipe that is quick, easy and can be stored overnight in the fridge? (Feel free to add me!) thanks so much!!

    Couscous and tuna, low in fat high in protein and takes two minutes to make. Add boiling water to the couscous and mix in a tin of tuna. Simple yet full of flavour

    I make chili for lunch. Portion it out for the week (some in the freezer for later in the week) and it's good to go in the microwave. This weeks chili was pumpkin black bean and it is amazing.

    cooked quinoa + shredded chicken + black beans + salsa + sautéed veggies. Can top with low fat cheese and bake the night before. Perfect with some avocado on top at lunch, hot or cold!

    Stir fry and season your veggies of choice and throw them in a pita. Boom! Done and delicious=)
