Strawberry & Vanilla Protein Muffins

90g rolled oats
1.5 rounded scoops low carb, strawberry protein powder
5 egg whites
1 whole egg
2 tbsp vanilla extract
3 strawberries

Mix all of the ingredients (exept the strawberries) in a blender until you get a gooey mixture. Chop the strawberries into small chunks and stir into the mixture. Pour the mixture into muffin tins. Place the tins in a preheated oven at gas mark 4 (350 degrees) for 15-20 minutes until the muffins are spongy to touch. Job done. The above measurements usually make around 5 muffins.

    155 calories
    16g carbs (6g of which sugars)
    3g fat (0.8 of which saturates)
    15g protein

    Per 5 muffins
    771 calories
    80g carbs (28g of which sugars)
    15g fat (4g of which saturates)
    70g protein

    This will obviously vary depending mainly on what brand of protein powder you use. The macros for the protein used in this recipe is below. Just subtract this from the (per 5 muffins) macros and replace with your own.

    260 calories
    25.5g carbs (24g of which sugars)
    3.3g fat (1.2 of which saturates)
    34g protein
