i love salads! Do you have any healthier but tasty recipes?

    I hope this is not too late. But my mother made this today is was delicious.

    Whisk together 2 Tbsp. lemon juice and 1/3 cup olive oil. Add one green apple julienned, 2 small fennel bulbs julienned. Stir in 1/2 cup sliced kalamata olives and parsley to taste.

    I have this several times a week for lunch....dice an apple, slice celery as thin as you can, add cooked chicken breast chopped fine and add light mayo as a dressing...I suppose it is like a waldorf. I make a personal size and it is HUGE (1 apple, 3 stalks of celery, 2-3 oz o chicken breast, 2 T mayo) and pretty low cal.

    IF I was making it for a party and a side...I think I would leave out the chicken, perhaps add some chopped walnuts, hazelnuts, or pecans, maybe bulk it up with some finely chopped lettuce or napa cabbage and add some grapes sliced in half too. I had a friend over for lunch who wasn't necessarily watching her calories and made her the above salad...she loved it as well!

    I have a few!

    A green salad with lettuce or spinach (or spring mix, whatever you prefer), cucumber, tomato, and strawberries, fat-free feta, and raspberry vinaigrette. I sometimes put walnuts and/or chicken breast on it too.

    I also make a kale salad with raw kale (no stalks, just the leaf), walnuts (or another nut), dried cranberries, and parmesean cheese, with a dressing made from 1/4 c evoo, and 1/4 c apple cider vinegar. I also sometimes do this is golden raisins instead of cranberries, half lemon half lime juice instead of vinegar, and no cheese.

    For "meatier" salads, I make tuna salad with a can of white albacore, 2 tbsp of whipped cream cheese, a diced jalepeno, and seasonings to taste.
