    Tofu Chocolate Mousse

    • 1 (13½-oz Pkg) Silken tofu
    • 1 ripe banana
    • 8-oz semisweet chocolate, melted

    1. Blend tofu and bananas together in food processor until smooth.
    2. Add melted chocolate and blend until color is dark.
    3. Before the mousse cools, portion into 6-oz Martini glasses and then store in refrigerator.
    4. Chill about 40 minutes before serving.

    I only started regularly eating tofu a couple years ago, but here are a few of my favorite recipes. I switch up the veggies depending on what I have around and feel like eating.

    General Tso's Tofu (I use regular honey, not a vegan one)

    Crispy Lemon Tofu

    Peanut Sauce Vegetable Stir Fry with Tofu

    Smoked Cheddar Mac'n'cheese with Baked BBQ Tofu
