Time to plan - Lunch!

So, it's time to plan lunch today and I am drawing a blank. I would love some simple suggestions for a fairly small meal, possibly vegetarian.

    Mine is leftover marinated chicken, added to sauted mushrooms, bell pepper and onions (with olive oil). Will also have a sweet potato with a bit of ranch dressing on top. I'm currently doing an elimination type diet to try and pinpoint the culprit of some health issues I have, so I'm grain free/low carb right now.

    eta: added salsa to the chicken/veggie mix and it was great! Will be doing the chicken and salsa combo again :)

    A salad topped with hummus and feta cheese is always an easy favorite for me.

    Cool! I ended up with a leftovers quesadilla. Pork chop, olives and cheese on a tortilla is really really good!.

    Flatbread pizza, quesadilla, salad, soup, wrap, taco (corn and zucchini are great taco fillings!)

    Cottage cheese and green bell pepper or hard boiled egg sliced up on a whole wheat tortilla with 1/2 an avocado (other half in my morning smoothie).
