Meal prep ideas/recipes?

I find myself planning my meals ahead of time in my head and logging them on MFP so I know how many calories I plan to eat that day and leave allowances for unexpected snacks or special events like a date at a restaurant or happy hour with friends.
I'd like to start meal prepping so I can spend less time worrying about figuring out calories when I'm rushed to have a meal before class or work.
I usually eat oatmeal with fruits for breakfast or toast with a fried egg. For lunch I'll usually have a turkey or tuna sandwich with avocado or hummus, and cheese. And for dinner usually quinoa with some protein and vegetable stir-fry. Snacks are usually cottage cheese or Greek yogurt with fruit, or hummus with carrots and bell peppers. What are some other ideas for meals that I can prepare 1-2 days in advance? Thanks!
