Nearing the Finish Line

I am 3 weeks to my goal date, my 40th Birthday. I've lost about 20lbs sofar and my wardrobe is in need of refurbish, but I shall not spend money yet for I've just 17 more lbs to go. WOOHOOO!
I'm collecting and analyzing my own data and have reached the mathematical number of needing to burn 2587 calories per day. How can I do this? I am looking for methods from extreme all the way to safe and sedate; I will likely choose something in the middle.
I just bought a well taken care of Bowflex Extreme2 after figuring out that I HAVE to include strength training into my routine, as 3x/wk of Taekwondo wasn't enough.
