If i am counting calories and macronutriens ina ratio of 40.30.30, do i have to stick to it, every single meal? Or if i comply with the ratio at the end of tje day it is ok?

You don't have to stick to it every meal. The end of the day or even balanced over a few days is okay. I sometimes have days when I am low on protein, for example, but overall I tend to go over so a day short here and there doesn't bother me.

It's just a rough gauge. There's nothing magical about the percentages. As long as you're getting a decently balanced diet, it doesn't matter all that much for weight loss.

Calorie deficit is the most important thing for weight loss. That being said, you want to provide your body with the nutrients it needs. Striving for an overall 30/30/40 sounds like a good balance.
