Chicken Robert (French pronunciation, s'il vou plaît): Only 676 Calories!
Not bad, if I say so myself, extremely fast and easy to prepare, and surprisingly low in calories!
Sauté 1 cup of pre-cooked Purdue Short Cuts Carved Chicken Breast Southwestern Style (or any other style of chicken you like) and mushrooms (as many as you want because they have very few calories) in 1 tablespoon of Smart Balance or butter and a little bit of white wine.
When the mushrooms (look like they) taste yummy, add 3 tablespoons of Prego Alfredo Sauce Flavored With Savory Bacon. You may want to add a little more; it's 80 calories per quarter cup. You can use lots of other sauces here. I'm going to use some Lobster bisque soup next and make with lobster & crab meat, scallops and shrimp and bake some cheese on top. Haven't thought of the name for that yet.
Season with as much Old Bay Seasoning and basil as you like. No calories.
Heat up some Diner's Choice - Country Style Mashed Potatoes in the microwave. Home-made would be better but that's a lot more work!
Pour yourself a nice glass of white wine. I really like Cakebread Chardonnay but won't open a new bottle just for one person.
Pour the whole concoction of chicken, mushrooms, sauce, and seasoning over the mashed potatoes. Eat and drink! Afterwards, let me know what you think.
