Burdock recipies

Ok, on the family farm we have a bunch of burdock, in our asparagus field people used to stop and ask if they could pick it and to our family it is a weed but now that I am eating healthier I would like to try and see how it tastes. Does anyone have any really good recipes for burdock and I was wondering what part of the plant the recipe calls for.
