How to do the calories for my roast chicken + bone broth

I've started to make roast chicken and bone broth in a crock pot, but I'm finding it tricky to sort out the calories, and I was hoping to get some helpful ideas.
What I am doing is buying a whole chicken with giblets. Then I take out the giblets and save for the bone broth later. I cook the chicken with some root veggies like potato, carrots, parsnips, and onion. So the end product is a cooked chicken, some veggies/starch, and liquid. The first time I did this I left the bones in and would reserve them as I ate the chicken. The second time I did my best to get most of the bones and a fair bit of chicken skin out when I first cooked it. I save the bones and as much of the chicken skin as I can for the broth.
Once I have two chickens worth of bones, skin, and giblets, I'll make the bone broth. My understanding is I can use the bones an additional time or two for more batches of broth as well.
So, what I am finding tricky is figuring out how many calories are in the chicken, the veggies & liquid, and then in the broth that I make later. Help!

I'm not sure about the calorie part but from my experience, if you boil the bones for over an hour, they have given all they can give.0

I would just rely on the non-asterisked entry.
Search for "soup stock home-prepared" and choose one of the non-asterisked entries, which are MFP-entered from the USDA National Nutrient Database.0 -

I guess one of my questions is when you are getting calorie information about a whole chicken, does it count the bones and giblets, or is it just the meat? When I'm building the recipe should I put the whole weight that I started with (the bird was weighed at 6.6 lbs), or try to subtract the bones and giblets?0
