Can Anyone Recommend a Low Calorie Baking Mix?

I like baking homemade ham and cheddar biscuits. The last time I made them, I used the following ingredients:

3 slices (56 gr.) Applegate black forest ham - 50 calories (10 from fat)
3/4 cup Organic Valley mild cheddar - shredded - 330calories (240 from fat)
Bob's Red Mill Bread Mix (gluten free) - 8 servings (224 gr) - 800 calories (40 from fat)
water instead of milk

That yielded 9 decent (read: big) size biscuits - each one at 131 calories (32 from fat.)

I wonder if anyone happens to know of a good baking mix that would help lower the calorie intake without compromising the quality/taste of the final product.

    The only suggestion I have is to use a lighter cheese, with the same amount giving you less calories, or a stronger cheese so you can use less.

    Altering recipes by substituting ingredients doesn't give the best results imo.... I'd rather make smaller biscuits and eat less of them!
