Losing Belly Fat

First, a short back story:

I contracted polio at age 3 and I'm now 64. I have always had weakness on my left side but always managed to be active and have exercised on and off my whole adulthood. In my late 50's I began feeling intense pain in my left lower leg and foot and as it grew worse I pretty much stopped all activity and sought medical intervention. Two toes were partially amputated, but I soon learned they were not the source of the pain. Then I found a team of two doctors - a neurologist and a podiatric surgeon, who diagnosed severe peripheral nerve damage. I had another surgery about 16 months ago where the suegeon cut out the damaged nerve and replaced it with processed human nerve tissue. This was done in 3 places in my leg. It CURED the pain!!!

Once I was cleared, I began exercising again and in the last year I have lost 23 lbs. I do strength training (with and without free weights and at the gym) and do a variety of cardio 6X week. I count my calories and rarely go over. I've just started to not eat back my earned calories from exercise. My legs and arms are reasonably toned. I'm trying to lose another 7-10 lbs but I've hit a plateau.

All this to build up to my question (and apologies for the length of the post) ... I STILL have significant belly fat!!! I do different abs routines 3+ times per week. But in more than six weeks I have not seen any difference in the amount of belly fat! I eat plenty of protein, drink about 60-80 ounces of water per day and meet my fiber goals. How can I shed this extra fat?! I know it's not possible to spot shed fat, but you can imagine my frustration!
