Measuring and tracking protein?

So if I weigh a bone in pork chop, do I weigh in the bone and minus the weight of the bone? Or do I just keep the weight including the bone?

The same question for measuring a steak.

    I would weigh it and then weigh the remains (the bone and whatever you didn't eat) and subtract.
