getting a little bored with my basic veggies any healthy ways to change broccoli and green beans, etc.

    Have you tried them in salads? Steam al dente.....yum.

    Roasted in the oven (spritz with olive oil...maybe add some garlic).

    Puree (or not) and add to soups.

    Cauliflower (related to broccoli) has a really mild flavor....great roasted.

    You could try cooking it Indian style but without the North Indian style saucy preparations of cream, oil, butter and starch. Fry some onions (a little oil goes a long way) till they are golden brown, add minced garlic (turmeric, mustard seeds, ginger are optional, use if you have them or not), salt, pepper, cumin seeds, hot peppers/paprika, crushed tomatoes(optional) and add whichever vegetable or mix of vegetables you want and cook till they are soft. Eat with a tortilla as a roll-up or just mix with rice or any other grain you like. You can use Indian spices if you have or just add a pinch of garam masala to give it a kick while its cooking, If not, it still tastes great.

    Saute and then put some lemon juice, salt, pepper, and a little parmesan cheese on top. Awesome.

    grill veggies on the bbq...we just had some asparagus and zucchini last night, delicious with some olive oil and salt/pepper.
  • Salads! For broccoli I like to slice them really thin.

    But if you're bored of broccoli and green beans, maybe branch out a bit? There are tons of delicious veggies...

    Basic vegies? I don't do basic.... I eat a rainbow everyday! Buy different things every time you go to the shops... I try to eat seasonal so it just depends what they have

    Most things are delicious grilled or roasted. Using different dressings is good for adding flavour too.

    Broccoli with Sweet Soy Glaze

    Serves 4

    Ingredients

    2 heads broccoli with stems
    1/4 cup onion, finely chopped
    1 garlic clove, minced
    a drizzle of honey
    a drizzle of low sodium soy sauce
    a drizzle of sesame oil

    Directions

    Cut stem from broccoli crown. Break or cut broccoli crown into florets. Cut 1” of the broccoli stem to remove dry end, peel stem and cut into 1/2” dice. Place broccoli, onion, garlic and a splash of water in a microwave safe bowl. Microwave covered on high for 7-1/2 minutes. Drain and drizzle with honey, soy sauce and sesame oil. Stir to combine.

    Steamed Green Beans

    2 lbs green beans, trimmed
    1 Tbsp walnut oil
    1/2 Tsp salt
    1/4 tsp freshly ground black pepper

    Steam green beans, covered, 5 minutes or until crisp-tender. Drain and return to pan. Add oil, salt, and pepper; toss to coat. Serve immediately.

    Yield: 12 servings(serving size: 2/3 cup).

    Calories 33; fat 1.1g; protein 0.9g; carb 4.7g; fiber 2.8g; chol 0mg; iron 0.4mg; sodium 98mg; calc 38mg.

    Note: Blanch beans and run under cold water then add a pint of grape tomatoes and dress with S&P, walnut oil and white balsamic vinegar for a nice fresh salad.
