    One thing to watch out for is some of the recipes are looking to lose gluten or wheat (or whatever), but that doesn't always make them low calorie. Some of the pizza "doughs" with cauliflower have eggs and a ton of cheese, and they can be pretty high calorie. And some of the mashed cauliflower (supposed to be like mashed potatoes) can use heavy cream and lots of other high calorie ingredients.

    Feel free to make the substitutions, but don't just assume it's "healthier" because it's cauliflower.

    (Also, cauliflower is only not disgusted when deep fried; then it's delicious.)

    I've used cauliflower as a substitute for potatoes & rice.
