Vegetarian "Beef" Chili

Ingredients:
-1 bag of frozen Boca crumbles
-1 can of black beans
-1 can of red kidney beans
-1 large white onion
-2 cups chopped mushrooms
-1 can of tomato paste (small)
-1 cup of water
-1 large tomato (chopped) or 1 can of diced tomatoes
-2 cups of tomato sauce
-3 tablespoons hot sauce (optional)
-2 tablespoons minced garlic
-salt (to taste)
-ground black pepper (to taste)
-shredded cheese (optional)
Directions:
Turn crock pot on low heat. Pour tomato sauce in the pot followed by chopped onion, mushrooms, and garlic. Next, add the beans (rinse well!) Stir for a few minutes then add water, tomato paste, chopped (or diced) tomatoes, and hot sauce (if using). Stir again then add the Boca crumbles. Stir one more time then close the lid and keep the heat on low. Let cook for 5 hours and check to stir every hour. When it is almost finished, add salt and pepper. After 5 hours, turn heat off and add shredded cheese if desired.
Zucchini Sticks

Ingredients:
-1 zucchini
-2 tablespoons shredded cheese
-1/2 teaspoon olive oil
-pinch of ground black pepper
-pinch of salt (optional)
-garlic powder (optional)
Directions:
Preheat oven to 300 degrees. Rinse the zucchini, dry, and slice vertically in half. Spread a very thin layer of olive oil over the flesh top of each zucchini half. Sprinkle some pepper, salt, and garlic powder along the top of each half. Next, sprinkle shredded cheese on the top of each half. Place zucchini halves (flesh side up) on a non stick baking pan or aluminum foil. Bake for 10 minutes then broil for another 5-10 minutes (watch carefully). The cheese will be lightly browned when ready.
Homemade Bean Burger

Ingredients:
-1/2 can of black beans
-1/4 cup seasoned bread crumbs
-1/3 onion (minced)
-1 egg
-pinch of salt
-pinch of pepper
-1 teaspoon of hot sauce (optional)
-olive oil (for cooking)
-1/4 cup chopped parsley (optional)
-sliced cheese (optional)
-hamburger bun (optional)
Directions:
Drain the black beans. Place them in a bowl mash with a fork until they're mostly broken up. Add the breadcrumbs, onion, egg, salt, pepper, and hot sauce. Stir very well then let the mixture sit for 5 minutes. Oil a frying pan and turn on medium heat. Form the bean mixture into patties. Place the patties in the pan and cook around 5 minutes then flip and continue cooking them for another 5 minutes. Next, put a cheese slice over the bean patty (place a lid on the pan to help the cheese melt if needed). Turn heat off and place the bean patty on a bun (if using). If you want to add lettuce, tomato, ketchup, and/or mustard go ahead.
