Active but ''not eating enough'' - Am I actually jeopardazing my health/weight loss?

Alright so this might take a while but I think details are important, so please carry on with me haha.
Being 5''1, I've been eating around 1200 calories a day for around 6 months, trying to lose a pound/1.5 pound per week or so. It always worked pretty well for me, and was way enough to keep me satiated - except I had my fair share of stress and downs during a few weeks this winter, and I dropped to often eating ~900 cals per day for a week or two, something like that. Then went back to 1200, while exercising as much as I could (2-3 times per week) on top of walking a lot lot lot since I don't use a car or public transport but still need to get to far away places.
I recently decided to up my game to 1300 calories per day, since I basically exercise 3-4 times per week minimum now since a month or two, my schedule including one pole dancing and badminton class, and cycling as often as possible, on top of my long walks.
It worked great for...2 or 3 weeks max.
And now it's been a while and I just can't manage to eat past 1000-1150 everyday.
Last time I checked, I was 113 lbs, maybe I'm still there, maybe i'm between that and 110. I haven't checked in a few weeks.
I eat a good breakfast, usually something with fiber and protein (PB, whole wheat bread, oatmeal, smoothies, always with a banana), going up to 350 most days. But then at school lunch comes around and I eat a baked egg paired with an apple, a whole bran muffin or a yogourt...but basically it's pretty much only 200 calories. 300 once a week maybe. I don't know, I have quite a fragile digestion and eating too much at noon makes me feel sick and tired the whole day.
Then comes dinner around 5, which I always cook myself! Except I'm a huge veggie fan, which should probably be a great thing, except that appart from a 3 oz portion of meat and veggies, I rarely eat any carbs since I have trouble digesting them. So in the end, I eat little for lunch and dinner, and even with a moderate share of dessert, I end up haing eaten too little. I'm just so tiny and not that hungry most of the time so snacking on more than a piece of fruit seems odd to me.
The problem? I don't know if my brain is messing with me, but I feel like I haven't lost much weight or gained muscle from my workouts (especially looking at you, tummy...). I should be, I already started back then. So I,m worried the sudden calorie drop is keeping me from getting anymore fit ?
I'm probably answeering my own question by doubt but I need to be soothed down because I actually can't tell if I'm doing wrong, just right, or totally exaggerating. Also if you have tips on how to add consistency/calories to my diet without making it uncomfortable, I'm all ears. I'm gonna need to go on a maintaining program soon enough anyway..

If you are looking to increase calories and volume is the issue where you just get too full, and if carbs bother you, you could try a tbsp of peanut butter or a half ounce of nuts to add more calories, fat, and protein. A serving that small should not tax your stomach much more than what you are already eating, but it is calorie dense. Same for cheese. Avocado may be another option to add to a meal you already like.0
