Cooked radishes...holy YUM!

So I was weeding the garden today and noticed that my radishes were ripe or the picking. I grabbed the ones that were ready, washed and chopped them up. During my research on how to "can" them I found multiple recipes for cooked radishes. Now, the way I cooked them up is not low cal or fat. BUT, could easily be transformed. The first is what I did today....then I will share my ideas for a future low cal spin on it.

3ish cups cut radishes
2ish cups mushrooms
1 cup cut carrots
1 cup chopped onion
2 strips apple wood smoked bacon chopped
2 tbl. butter
3 grinds black pepper

in a large saute pan start cooking bacon with butter
when it is about half done add veggies
cook them until tender

OMG...the radishes taste like turnips, but better!

Next time for my heart and body healthy version I will have turkey bacon. I think I will keep the butter though. I was just amazed at how good cooked radishes are.

If you have more ideas on radishes please let me know...I have about 200 more coming... :)

    I was told once if you are out of mushrooms to put into your spaghetti sauce, to slice up and fry some radishes and put them in your sauce and they taste like mushrooms. I concer!!! This was years ago though, so maybe I was just hallucinating. HAHAHA

    I must try this! But, meanwhile...
    I found out I loved butter primarily for its salty flavor (I realized this when I tried the unsalted butter and it was just greasy).
    Try replacing the butter with olive oil and a little salt. It will cut down on the saturated fats.
    I will have to try this theory and get back to you.

    Here's the breakdown of the recipe with Olive Oil:
    Calories per serving, if you divide into 7 servings:
    35 calories of Olive Oil, (0.29 tbsp)
    11 calories of Bacon, (0.29 medium slices, cooked (raw product packed 20/lb))
    9 calories of Onions, raw, (0.14 cup, chopped)
    7 calories of Carrots, raw, (0.14 cup, chopped)
    4 calories of Mushrooms, fresh, (0.29 cup, pieces or slices)
    4 calories of Radish, Fresh, (0.86 oz)
