No Carb Easy Lunch

I was getting bored of trying to find No Carb or Low Carb Lunches, Then I came across this little delight .... easy cheap and low calorie.
Stuffed Peppers
1 Red Pepper (pepper colour of your choice)
Tin of Tuna in Spring Water.
Low fat Sour cream. (tablespoon or whatever your preference this is my mayo replacement)
Hot pepper Sauce
Red Onion
Teaspoon Sweetcorn.
Prep and Method
Drain Tuna, mix in cut onions, Sweetcorn and desired amount of Sour Cream and Hot sauce ( if you dont have hot sauce, sliced Jalapenos are always an option)
Cut Pepper directly down the middle and de-seed then fill with your Tuna mix .
(some people may prefer to blast the pepper in the microwave for 30 seconds- 1 minute to have warm and softer, I prefer mine crunchy.
This will work great with other fillings ie: Chicken mixes, turkey mixes , prawns etc.
