OMG Breakfast!! 233 Cal / 4.7 Fat / 11 Carb / 32 Protein

I'm in love with this breakfast creation. I've tinkered around with it for a few weeks and it never disappoints- but it's SO simple & basic. The secrete is the mushrooms and laughing cow cheese. It's very hardy and ties me over from 6am to mid morning snack at 10am and reminds me of egg and sausage tacos- sort of. Very creamy and yummy and only takes about 5 minutes to make. I've added various vegges- what ever I have- and it's always great. And comes in around 233 Cal / 4.7 Fat / 11 Carb / 32 Protein!!

Add to a ceramic coated frying pan on medium heat:
  • 2 slices of Turkey Bacon cut into small bits (I use Butterball)
  • 1 cup sliced Baby Bella Mushrooms (I leave them pretty chunky so the dish has more volume)
Allow the mushrooms to cook down about 3-4 minutes
  • Add 4 servings of egg whites (I use Walmart's generic)
  • Add a little bit of ground pepper to your taste
Cook until the eggs are done (about a minute)
While that's finishing, add to your serving bowl:
  • 2 wedges of laughing cow garlic and herb cheese
Stir the cheese until it's smooth
Add hot egg and mushroom mixture on top and fold in the cheese
